  If you visit the little town of Espelette in the French Basque Country, you must stop by this perfumery (they also have a shop in Bayonne). What really stands out is that they handle 100% natural fragrances—the most authentic ones I’ve ever tried. Many evoke the local countryside, and they nail that clean hay accord beautifully, like in ‘Un Jour a Quebec’. Out of the ten I tested, many last on the cardboard tester for over three days with incredible potency. ‘Un Jour a Bayonne’ is green, natural, and has a sweet touch that deepens as it dries. At first, it smells of lavender, rosemary, and a hint of mint. Gradually, an anise note emerges (caraway, fennel, or licorice?) while the fragrance sweetens without becoming cloying, thanks to celery. The heart-dry-down is linear and dominated by celery, with clear notes of fennel and stick licorice. It’s a summer scent: fresh, naturally sweet (not added), very pleasant, and ‘peaceful’. The longevity is notable and the projection is average. It smells super natural and hides the synthetics it surely contains very well. If you like this style, you’ll love it. At €48 for 100 ml, it’s unbeatable.
